MEXICAN CHICKEN QUESADILLAS

WHAT TO SERVE WITH IT

Chicken Quesadillas although have enough flavors full of chicken, cheese, vegetables and can stand on their own without any extra serving. But still, we can serve: 

  • Sour Cream
  • Salsa
  • Quesadilla Sauce (which makes the experience even more better)
HOW TO MAKE IT

You can make chicken quesadillas in 30 minutes which consists of 20 mins of prep time and 10 minutes of cooking time. In order to make chicken quesadillas and quesadilla sauce, the following ingredients are needed and directions are needed to be followed: 

INGREDIENTS: 

For Seasoning Mix: 

1 teaspoon of salt (you can use kosher salt)

Half a teaspoon of onion powder

Half a teaspoon of garlic powder

Half a teaspoon of dried oregano

Half a teaspoon of cumin

Half a teaspoon of chili powder

Half a teaspoon of paprika which can be smoked or regular

A quarter teaspoon of black pepper.

For Quesadillas:

4 cups cooked and chicken should be chopped

1 tablespoon of oil

2-3 cups of sliced mushrooms (optional – see note)

2 medium bell peppers of any color which should be cored and sliced into thin strips

1 large onion which should be sliced into thin half-moon strips

2-3 tablespoons of water

2 cups of shredded Monterey Jack cheese

1 cup of shredded medium or sharp cheddar cheese

Eight 8-inch flour tortillas

For Quesadilla Sauce

A quarter cup of mayonnaise

A quarter cup of sour cream

Half a tablespoon of pickled jalapeno juice 

Half tablespoon pickled jalapenos (diced)

1 teaspoon of ground cumin

1 teaspoon of paprika

Half a teaspoon of onion powder

Half a teaspoon of garlic powder

A quarter teaspoon of chili powder

A quarter teaspoon of salt 


DIRECTIONS:

1.   First of all, in a small bowl, add all the seasoning ingredients in it and mix it well.

2.   Toss the chicken in the bowl with half of the seasoning mixture of ingredients and set aside.

3.   Then, in a 12-inch nonstick skillet, heat the oil over medium heat. Add bell peppers, mushrooms (if using), and onions. Scatter the remaining seasoning mixture over the veggies. Then cook, stirring often, until the onions start to turn translucent or transparent and the vegetables start to get soften.

4.    Add 2-3 tablespoons of water in it and continue cooking over medium heat for 2 to 3 minutes until the veggies are crisp-tender and the liquid has reduced a little bit.

5.    Now assemble the quesadillas by spreading cheese on half of each tortilla. Top the cheese with chicken, veggies, more cheese (to make it extra cheesy), and then fold the tortilla in half over the filling ingredients.

6.   Then, heat a 12-inch nonstick skillet (or griddle) over medium or medium-low heat. Add a touch of oil to the pan so that the quesadilla gets crispier. Cook the quesadillas on one side until it turns golden, moderating the heat as needed, pressing gently with a spatula to compress and flatten a bit, if desired. After this, carefully flip the quesadillas with the spatula and cook on the other side until the tortilla is golden in color and the filling and cheese is hot and melted.

7.    Now keep the cooked quesadillas warm on a baking sheet in a 200-degree oven until are ready to serve your quesadillas.

8.   To make the sauce, dice the pickled jalapenos.

9.    Measure the ingredients and put them into a small bowl

10. Stir all the ingredients together until properly combined and your quesadilla sauce will be ready.

11.  Cut your crispy hot and melted juicy chicken quesadillas into triangles.

12.  Serve immediately on a plate with the sauce.

NOTES:

·       The quesadilla sauce can also be made even before making the chicken quesadillas (according to your preference).

·       You can add any vegetable like the variety of bell pepper, jalapenos to make it spicy, mushrooms if you want to, yellow or red onion, or any vegetable you like.

·       If you don’t want chicken in it, you can leave the chicken out and just go with your veggies and make vegetable quesadillas or you can also use beef instead of chicken.
